My husband's oatmeal recipe had me eating from the pot! Check it out

Salt, Coconut Oil, Maple Syrup & This Surprise Ingredient turns Oats into a Finger-Lickin' Breakfast.

My husband is one of the best cooks I know. He is Shakespeare when it comes to curating ingredients and adding soul through the right spices, fats, and cooking time. This morning, he turned our organic whole dry oats into a finger-licking bowl of gourmet delicious goodness. What would normally take me 10 minutes of on and-off nibbling at the bland oats, turned into a delightful vanishing of breakfast in 30 seconds that filled me up while warming my heart and tastebuds.

On an educational tip, and before we dive into the recipe, cooking in our house is all about nourishment; it's also a fantastic skill we actively try to teach our children. To me, seeing how spices combine to create new flavors is akin to learning sounds that combine to create new words. It's a journey of discovery and creativity that flourishes right in the home. 

Now, when I asked my husband about the recipe, he hipped me to a magical secret ingredient....

Are you ready for it? It's Vanilla Extract!

Am I the only one who never-in-a-million years would have thought to add this tasty splash of extract to my morning oats? Not only this, the full combo of salt, coconut oil, almond milk, vanilla, and maple syrup turned my morning into masterpiece. 

Here's how he did it:

Adding the Good Stuff:

  • 3 cups of water and 1 cup of almond milk
  • 2 cups of whole organic oats
  • A few pinches of salt
  • A table spoon of coconut oil
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of maple syrup (added to the oats once in the bowl)

Cooking it Up:

  1. In a medium pot, combine the water, oats, salt, and coconut oil.
  2. Bring it to a gentle boil over, stirring occasionally.
  3. Reduce the heat to low and simmer for about 10-12 minutes, or until the oats are cooked to your desired consistency.
  4. Stir in the vanilla extract.
  5. Remove from heat and let it sit for a minute or two.
  6. Serve up in a bowl, drizzling the maple syrup over it. 
  7. Enjoy the finger-lickin' goodness!

This serves 4.
